Recipe by: Tumi Mogoai

Makes: 4
Prep time: 30- 35 min
Yorkshire puddings
1 cup flour
1 cup whole milk
3 large eggs
1 tsp salt
¼ cup vegetable oil
4 tbsp sunflower oil, 1 for each steak
8 tbsp butter, 2 for each steak
4 steaks of your choice
4 garlic cloves, halved
¼ cup Clover Bliss plain
4 sprigs
Salt and pepper to taste
For the puddings:
Place flour, milk, eggs, and salt in a medium bowl and whisk until smooth. Set aside to rest at least 20 minutes while you pre heat the oven to 230C.
Pour oil into each well of a 12 cup muffin pan.
Place the muffin tin on a baking sheet before placing in the oven to bake for 5 minutes to heat the oil and the pan.
Remove the muffin tin from the oven. Whisk the batter, then pour it into the wells of the muffin tin.
Return the muffin tin into the oven and make sure the muffin tin is on the baking sheet to catch any drips. Bake until puffed, deep golden brown, and crisp to the touch, about 20 to 25 minutes for individual puddings. (Do not open the oven door during the baking time!
Remove the individual puddings from the pan and serve immediately.
For the steaks:
Place a large skillet/cast iron/stainless steel pan high heat. Add the oil then butter.
Place your steak fat side down first (to render the fat) then allow the steak to cook for about 3-6min on each side depending on your desired doneness. Season each side generously
Towards the end of cooking time, add the halved garlic cloves and rosemary. Once all steak are cooked, strain the oil then stir in the Bliss, season and serve the sauce on top of each steak.
Enjoy with the yorkshire puddings
