Woolworths Spring chicken and green veg bake
 
A simple, fuss free recipe great for leftovers!
 
1 tablespoon butter
Dash of cooking oil
1 onion, chopped
2 cloves garlic, chopped
300g brocolli florets, rinsed
3 baby marrows, sliced into discs
Bunch of Swiss chard spinach, chopped
3 steamed chicken breast, shredded
1 T flour
1-2 cups milk
1 cup wholewheat cooked macaroni or penne pasta
½ c Cheddar cheese, grated 
Handful chopped parsley and fresh basil, chopped
 
Preheat the oven to 180. Oil a baking dish. In a large saucepan, heat the butter along with a dash of cooking oil and fry the onion and garlic until translucent. Add the brocolli and marrows. Sprinkle the flour over the mixture and allow to cook for a minute. Gradually add the milk whilst mixing everything together and for the sauce to thicken. Add chicken, spinach and pasta and season with salt and pepper. Cook until swiss chard has just wilted. Remove from heat. Sprinkle over some cheddar cheese and chopped parsley. Bake in the oven for 15-20 minutes until the cheese has melted. When serving, add a dash of sour cream/yoghurt and a scattering of fresh herbs. Serve with a fresh green salad. 
 
Notes: 
- Brocolli and swiss chard are good sources of iron and calcium
- Using wholewheat pasta is a good way to increase your daily fibre intake
- You could also use tuna instead of chicken breasts to include more good fats or as a lean meat alternative
