Roast Hasselback Potatoes with Caper Butter

10 Large Potatoes
WW Duck Fat to Cover
100g WW Salted Butter
15 pitted Green Olives
50g WW Capers
Peel the potatoes and slice them hasselback style
Cover with duck fat
Pre-heat the oven and roast at 180 degrees Celsius for 30 –40 minutes until golden brown and crispy.
Prepare the butter by placing 100g salted butter, 15 pitted green olives and 50g medium capers in a blender.
Blend until combined but still quite chunky.
Top the potatoes with butter and salt to serve.
