Woolworths Plant Powered Schnitzel with Pesto Noodles and Salad

1 Woolworths Plant Powered Schnitzel
1 cup Woolworths Cauliflower Noodles
1 cup Baby Spinach, large stems removed
1 ½  Tbsp toasted Pine Nuts (and extra to garnish)
1 large Garlic Clove, peeled 
1 Tbsp Lemon Juice
½ tsp Lemon Zest
1/4 tsp Sea Salt (plus more to taste)
¼ cup Tbsp Extra Virgin Olive Oil
3-6 Tbsp water (plus more if needed)
½ pack Woolworths Herb Salad Mix, to serve
 
MEHOD
Bake the Woolies Plant Powered Schnitzels according to package instructions.  
Add your noodles to a pot of boiled water and leave for 1-2 minutes, then strain and set aside.
In the blender, add spinach, pine nuts, garlic, lemon juice and zest, and the sea salt. 
Blend together while slowly adding the olive oil. 
Only add water if needed to loosen the pesto. 
Add some of the pesto into the noodles and toss to coat thoroughly. 
The remaining sauce can be used as your dressing for the salad.
To serve, place your cooked schnitzel on the plate, top with the noodles and garnish with toasted pine nuts. 
Serve alongside a fresh herb salad.
