Winter Warming Pudding with Clover Classic Custard

1¾ (260 g) cup self-raising flour
1½ t ground ginger
¼ t bicarbonate of soda
100 g soft brown sugar
2 tbsp treacle or golden syrup
120 g butter, melted
½ cup buttermilk
3 eggs
50 g glacé ginger, chopped
Ginger sauce
100 g butter
⅓ cup (75 g) dark brown sugar
⅓ cup ginger beer
200 ml cream
50 g glacé ginger, chopped
Clover Classic Custard to serve
Preheat oven to 180°C. Lightly grease a 6-hole giant muffin pan.
Sift the flour, ginger and bicarb into a bowl. Add the sugar, treacle or syrup, butter, buttermilk and eggs and whisk until combined. Add the glacé ginger and fold through until well combined.
Divide the mixture into the prepared pan and bake for 20-25 minutes until golden and slightly soft to the touch.
Meanwhile, prepare the sauce, place all ingredients in a small saucepan over medium heat and stir until the sugar dissolves. Bring to the boil and cook, stirring, for 5 minutes or until slightly thickened.

Remove from the heat and allow to cool slightly. Turn the puddings out into bowls and pour over the warm ginger sauce.

Serve warm with Clover Classic Custard.
