What's in the Fridge Fried Rice

What's in the Fridge Fried Rice

Ingredients 

2½ cups long-grain white rice  

1 Tbsp oil
1 brown onion, cut into thin wedges
2 cloves garlic, crushed
3 cm-piece fresh ginger, finely grated
4 cups diced vegetables (corn kernels, carrots, frozen peas, mushrooms, celery, sweet peppers)
2 cups leftover cooked chicken, sliced
2 Tbsp soy sauce
1 Tbsp brown sugar
fresh coriander leaves, to serve
 
Method

Cook the rice following packet instructions. Drain, then rinse under cold water. Drain well. Spread the rice onto a tray. Refrigerate until cold, if time permits.

Heat a wok or large frying pan over medium-high heat. Add the oil and swirl to coat. Add the onion and stir-fry for 3 – 4 minutes or until starting to brown.

Add the garlic and ginger and stir-fry for 1 minute. Add the vegetables and stir-fry for 4 minutes or until tender. Add chicken and rice and stir-fry for 3 – 4 minutes or until heated through.
Mix the soy sauce and sugar, add and stir-fry for 1 minute.

Serve sprinkled with fresh coriander leaves.
