Warm Green Quinoa Salad

½ cup quinoa
1 cup baby spinach/kale
½ cup paneer
¼ cup walnuts (roughly chopped)
2 tbsp dried cranberries
¼ cup broccoli (finely sliced)
¼ cup baby spinach/kale (blanced)
juice of 1 lemon
1 tsp honey
¼ cup olive oil
2 cups Clover fresh milk
2 tbsp lemon juice or vinegar
Add 1 cup of water into a saucepan followed by the quinoa and boil until fully cooked. Once cooked, rinse and set aside to cool.
For the paneer, pour your milk into a small saucepan and put your stove on medium heat. Remove the milk from the stove once the milk starts to boil. Add the lemon juice/vinegar in a bowl and stir. You will see that the milk will start to curdle, separating the curds from the whey.
Leave to sit for about 10 minutes and allow the mixture to cool before pouring into a bowl lined with cheesecloth. The liquid drain out and the solid parts will remain in the cloth. Squeeze out any access liquid and shape into your desired shape then set in the fridge until later.
For the dressing, pour all the ingredients into a blender and blend before pour the olive oil. Pour the oil a little at a time as you might not need all of it.

To assemble, Place the quinoa, baby spinach, crumbled paneer, walnuts, cranberries and broccoli in the bowl. Drizzle your dressing over everything and Enjoy.
