2 cans shredded tuna, drained
Half onion finely chopped
1Tbsp dried coriander leaves or favourite herbs
1 large potato boiled skin on and smashed
1 egg beaten
2.5 Tbsp flour
1tsp lemon juice
Oil for frying
Break up the tuna and place it into a bowl.
Add mashed potatoes to the tuna and mash together. Add the rest of the ingredients, except oil. Ensure that everything is mixed well.
In a non –stick pan heat a little olive oil.
Using a tablespoon spoon at the mixture and form small balls with your hands then flatten. Do not make them completely they should be about 2cm thick repeat for the rest of the mixture.
Fry the cakes in batches until golden brown both side.
Replace spice for with Cajun spice
Add/replace onions with spring onions.
