Tuna Cakes with Clover Classic Dairy Snack Dip

Preparation: 20 minutes plus 30 minutes standing
Cooking: 16 minutes 

INGREDIENTS

Fish cakes
2 x 170 g-tins tuna, drained
2 potatoes, cooked and mashed
1 cup breadcrumbs
¼ cup cake flour
1 onion, grated

⅓ cup mayonnaise
¼ cup chopped parsley
salt and pepper
½ cup sunflower oil

To create fishes
thinly sliced cucumber, cut in half, to form scales
halved cherry tomatoes, for eyes
small slices of yellow pepper, for mouths
quarter slices lemon, for tails
peas, to create bubbles
Dipping sauce
½ cup Sandwich Spread
⅓ cup Clover Classic Plain Low Fat Dairy Snack
lemon wedges for serving.

METHOD

Fish cakes
Line a baking tray with baking paper.
Mix all the ingredients for the fish cakes, except the oil, together in a mixing bowl. Divide the mixture in 8, shape into balls and place on prepared baking tray. Press flat to form patties. Put in the fridge for 30 minutes to firm up.
Heat the oil in a frying pan and fry the patties (4 at a time) for 3 – 4 minutes on each side until brown. Drain on paper towels.
Use the cucumber scales, cherry tomato eyes, yellow pepper mouths and lemon tails to create beautiful fishes. Arrange the peas so that it looks like the fishes are blowing bubbles.

Dipping sauce
Mix the ingredients for the sauce together. Serve the fish cakes with the sauce and lemon wedges.
