Thermomix Christmas Cheesecake


Thermomix Christmas Cheesecake
Recipe: Thermomix (The Basic Cook Book)
Serves: 8 – 10 
Preparation: 20 minutes
Standing: 5½ hours
200 g vanilla biscuits
80 g unsalted butter, softened
1 cup (250 g) water
90 g lemon jelly powder
400 g cream cheese
200 g cream
40 g castor sugar
Jam Topping
200 g red jam (e.g. strawberry, raspberry, plum)
2 Tbsp lemon juice
5 g (1 - 2 tsp) gelatine powder
50 ml water
To Decorate
1 pct raspberries 
1 pct strawberries
1 pct cherries
Place the biscuits in mixing bowl and crush 5 sec/speed 10.
Add butter and mix 5 sec/speed 5.
Spread mixture in base of a non-stick springform tin (24 – 26 cm). Use a spoon or your hands to press crumbs mixture down firmly to make a compact layer. Place tin with crust in the freezer.
Clean the mixing bowl. Place water in mixing bowl and heat 5 min/100 °C/speed 1.
Add lemon-flavoured jelly powder, cream cheese, cream and sugar and mix 20 sec/speed 5.
Remove tin from freezer and transfer content of mixing bowl to springform tin. Chill in fridge until filling is set (about 4 hours). Clean mixing bowl.
Jam Topping
Place jam, lemon juice, gelatine and water in mixing bowl and heat 3 min/80 °C/speed 2.
Allow mixture to cool for 10 minutes then pour it over the set cheesecake. Again chill the cheesecake in the fridge, for at least one hour. 
Decorate with lots of berries. Serve cold.
