
The Most Gorgeous Cupcakes made with Clover Classic Dairy spread

INGREDIENTS
Cupcakes
130 g self-raising flour
1 tsp baking powder
pinch of salt
2 eggs
125 g Clover Classic 50% fat spread with cream, softened
1 tsp vanilla essence
125 g castor sugar
Icing
1½ cup icing sugar, sifted
2 Tbsp water
Decorations
Smarties®
chocolate vermicelli
small pretzels
METHOD
Cupcakes
Preheat the oven to 180 °C and line a muffin tin with paper cups.
Sift the flour, baking powder and salt together in a mixing bowl. Beat the eggs, fat spread, vanilla and castor sugar together until well mixed. Add the flour mixture to the egg mixture and beat until mixed. Spoon the batter into the paper cups up to two thirds full. Bake for about 20 minutes or until a tooth pick comes out clean.
Remove from oven and let it cool on a wire rack until cold.
Icing
Mix the icing sugar and water together until smooth.
Spread the icing over the cupcakes. Use Smarties® to create flowers, rainbows, worms and dragon-flies. Use the vermicelli to make the worms feet and the feelers, also the feelers for the dragon-flies. Use the pretzels to make the wings for the dragon-flies.
