Thai Basil and Chilli Minced Beef with Eggs

Thai Basil and Chilli Minced Beef with Eggs

Serves: 2 – 3 
Preparation: 10 minutes
Cooking: 25 minutes

1 cup rice, jasmine

250 g beef mince
1 Tbsp oil
1 Tbsp chilli paste
2 Tbsp chopped basil
2 cloves garlic, finely chopped
1 chilli, finely chopped (or more if you like it hot)
1 red onion, halved and sliced
100 g green beans, nipped and cut in 4
100 g spinach, white stems removed and chopped
100 g frozen peas
1 lime or lemon, cut in wedges
4 eggs

Steam or boil the rice as per packet instructions.

Heat a pan and fry the mince until no longer pink. Breaking any lumps with the back of a fork. Spoon out and keep aside.

Add the chilli paste with the basil, garlic, chilli, onions, green beans and spinach to the pan. Sauté until the vegetables are soft. Then stir in the mince and peas, stir fry for a couple minutes and then add a dash of lemon or lime juice.

Fry the eggs according to taste (soft, sunny side up or turned). Spoon the meat mixture over the rice, with the eggs on top and the remaining lime or lemon wedges to the side.
