Tempura prawns with Classic Mayo dip

Tempura prawns with Classic Mayo dip

400g prawns, cleaned and shelled
2 cups panko crumbs
1 cup tempura flour
1 cup flour
1 tbsp chilli flakes
1 lemon, zested and juiced
1 clove garlic, grated
1 tbsp spring onion, thinly sliced
1 cup Clover Classic mayo
2 tbsp gherkins, roughly chopped,
1 tbsp smoked paprika
salt and pepper to taste
1 cup sparkling water or soda water
Oil for deep frying
In a bowl mix Clover Classic mayo with spring onion, garlic, gherkins, smoked paprika and season with salt and pepper. Cover with plastic wrap and place in the fridge to chill. 
Mix juice lemon juice and zest then toss prawns in the mixture. Season prawns with salt and pepper then set aside.
In a separate bowl, season tempura flour with salt and pepper then add chilli flakes and sparkling water and whisk thoroughly. Dunk prawns in plain flour then into the  tempura flour batter before covering with panko crumbs then deep frying until golden brown at 175 degrees.
Remove prawns from oil and place onto paper towel then serve with Classic Mayo dip
