2 tbsp cooking oil
1 can tomatoes (peeled, chopped and strained of most of the liquid)
1 tbsp tomato paste
1 large onion (chopped)
1 large celery stalk (chopped)
1 large carrot (chopped)
2 garlic cloves (chopped)
2 tsp fresh thyme
1 tbsp ginger powder
4 tbsp sugar
3 bay leaves
½ cup beef stock
salt and pepper to taste
Preheat your oven to 135C
Set your stove medium to high and in a large ovenproof pot, fry the oxtails. Only brown the outside then remove them from the pot.
Go in with your onion, celery and carrots and cook for about 5-7 minutes allowing them to deglaze the bottom of the pot. Add tomato paste garlic, thyme, paprika, bay leaves and ginger powder and stir through.
Reduce heat and cook for a further 3 minutes before adding tomatoes and sugar. Finish off by adding the beef stock and seasoning then cover with the lid and transfer the pot to the oven.
Cook for 2 hours and only check after an hour making sure to stir and taste.
Serve hot with any starch of your choice.
