
T-Bone Steak with a Creamy Mushroom Sauce

Ingredients
2 × 600g matured T-bone steak
2 tbsp oil
2 tbsp Clover Classic Fat Spread
1 clove garlic
few sprigs fresh rosemary or thyme
salt & Pepper
Mushroom sauce
4 tbsp Clover Classic Fat Spread
1 onion, chopped
1 clove garlic, chopped
1 tsp dried thyme
250g mushrooms, sliced
3 tbsp flour
400ml cream
salt & pepper to taste
to serve
garlic and herb roasted baby potatoes, halved
1 punnet fresh rocket
120 g Kalamata olives, pitted
2 tomatoes, chopped
drizzle of olive oil and lemon juice
Method
Heat oil in a pan, season both sides of the steak with salt and pepper. Sear the steak for 2-3 minutes on each side. Add Clover Classic Fat Spread with rosemary and garlic. Spoon over steak as a basting. Then place in the oven for 10 minutes. Once the steak is done to your liking, let it rest for 10 minutes.
For the mushroom sauce heat 1 tablespoon of Clover Classic Fat Spread in a pan, add onions and garlic, cook for 2-3 minutes. Add the thyme and stir through before adding in the mushrooms. Cook until tender. Add remaining Clover Classic Fat Spread and allow to melt before adding in the flour. Mix well and whisk in cream vigorously. Allow to cook until thickened, season with salt and cracked black pepper. For the salad, toss together the ingredients in a bowl. To serve, spoon a generous amount of mushroom sauce over the steak and enjoy with the salad on the side.
