
Super M Vanilla Berry Cakes

As you might be looking for an afternoon tea treat, our Super M Vanilla Berry cakes will hit the sweet spot.
Super M Vanilla enhances the taste and flavour of almost anything. You can even add a dash to a cup of tea or coffee, when the milk has run out.
It’s a tasty treat offering fun, delicious flavours in pack sizes suited to individuals needs.

Note:
You can make a whole cake instead of using a muffin tray for this recipe.
Ingredients:
200g butter
1 cup castor sugar
3 eggs
1 1/2 teaspoons vanilla paste/essence
1 1/2 cups flour
1 tsp baking powder
3/4 cup (185ml) Super M Vanilla
Fresh berries, to serve
Icing:
250g white chocolate
1/2 cup (125ml) Super M Vanilla
200g butter
1/2 vanilla bean, split
To make icing, place chocolate, Super M and butter in a saucepan over low heat. Stir in the vanilla and stir until chocolate and butter have just melted and mixture is smooth. Set aside to cool and refrigerate for 1 hour.
Preheat oven to 180°C. Grease a muffin pan. Cream the butter and sugar until pale. Add eggs, one at a time, then beat in vanilla paste. Sift flour and baking powder into the mixture, alternating with the Super M, until all the ingredients are well combined.
Fill the pans three-quarters full and bake for 20 minutes until lightly golden. Set aside to cool.
Beat the icing with an electric beater for 2 minutes until thick and smooth, then spread over cakes and decorate with berries.
