Super M Crème Patisserie

Super M Crème Patisserie

Serves: Enough to fill one medium-sized cake or to pipe into 24 choux buns
Preparation time: 15 minutes 

500 ml Clover Super M Vanilla
30 g corn flour
pinch of salt
75 g castor sugar
1 whole egg (large)
3 egg yolks (large)

Pour the Clover Super M into a medium sized saucepan and bring to a slow simmer.
Meanwhile, combine corn flour, salt, sugar, egg and egg yolks in a bowl and beat until they are light and fluffy.
Gently pour a third of the simmering Clover Super M into the egg mixture while whisking constantly. Pour the remaining simmering Clover Super M into the egg mixture and whisk until combined.
Pour the mixture back into the saucepan, lower the heat and continue whisking until thickened.
Pour the crème patisserie into a glass bowl and place a piece of cling film directly on top to prevent a skin from forming.
Place in the fridge until it has cooled and set.
