Super Dad Sarmie

Recipe by Tumi Mogoai

2 chicken breasts
1 cup BBQ sauce
1 cup water
1 clove garlic (chopped)
1 tsp fresh thyme
sugar (if you like your BBQ sauce a little sweeter)
bread of your choice (I use sourdough)
1 apple (shredded)
2 tbsp shredded cabbage
1 tbsp mayo
½ tsp lemon zest
Preheat oven to 190C
In an ovenproof, medium pot, sear your chicken on either side. Add the garlic and thyme and cook for 3 minutes before adding the BBQ sauce and water. Only add the sugar if you want it sweeter.
Cover with a lid and transfer the pot to the oven to cook for 20 minutes. 
Carefully take the pot out of the oven and place on the stove. Remove the chicken from the pot and set aside. Switch on the stove and set to medium heat and reduce the sauce until thickened.
Using two forks, shred the chicken and place in the fridge to cool.
In a small bowl, mix the apple, cabbage, mayo and zest and make a quick slaw.
In a separate bowl, mix the shredded chicken with the reduced BBQ sauce.
To assemble the sandwich, start with the slaw, followed by the shredded chicken et viola.
You can toast it for more texture and flavour.
