Summer Strawberry Cake

Serves: 4
INGREDIENTS
1 ½ cups cake flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 tsp vanilla extract
½ cup buttermilk
1 cup (150g) fresh strawberries, chopped
To serve
1 cup strawberries, cut in half
Icing sugar
Clover Vanilla Custard
METHOD
Preheat the oven to 180°C.
Grease and line an 8-inch round cake pan.
In a medium bowl, mix the dry ingredients: flour, baking powder, baking soda, and salt.Set aside.
In a large bowl, beat the butter and sugar until light and fluffy (about 2-3 minutes).
Add the egg and vanilla extract to the butter mixture and beat well.
Gradually add the dry ingredients, alternating with the yogurt, until just combined.
Gently fold in the chopped strawberries into the batter.
Pour the batter into the prepared pan and smooth the top.
Bake for 25-30 minutes, or until a toothpick inserted into the centre comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Top the cake with a dusting of icing sugar, fresh strawberry halves and serve with chilled Clover Vanilla Custard on the side.
