Summer Shandy Mocktail

Serves: 2
Preparation time: 10 minutes

INGREDIENTS
½ cup lemon juice
¼ cup honey
½ cup tonic water, chilled
2 non-alcoholic beers, chilled

To serve:
Lemon or lime slices
mint
ice, optional

METHOD
Place two glasses into the freezer for about 5-10 minutes until chilled. In a large jug combine lemon juice, honey and tonic water. Remove glasses from the freezer, pour the mixture into each glass, top each glass with non-alcoholic beer. Garnish with lemon slices & mint sprigs.

Rosemary & Watermelon Mocktail

Serves: 4
Preparation time: 10 minutes

INGREDIENTS
4 cups watermelon, chopped & pureed
½ cup lemon juice
¼ cup honey
4 sprigs fresh rosemary
1L sparkling water, to serve

To serve:
ice
lemon slices
rosemary sprigs

METHOD
In a large pitcher add all ingredients and stir until well combined. Place ice into serving glasses, fill up halfway with the rosemary & watermelon mixture, then top with sparkling water. Garnish with lemon slices and rosemary sprigs.
