Summer Berry tart tatins with Clover Classic Custard

Baking time: 20-25 minutes
Serves: 6-8
1 sheet puff pastry, thawed
1 cup fresh strawberries, sliced
½ cup fresh raspberries, cut in half
30g butter
¼ cup castor sugar
2 tbsp water
1 tsp vanilla essence
Clover Classic Custard for serving
Preheat the oven to 200C.
In a saucepan, melt together the butter, sugar, water and vanilla essence. Stir until the sugar is dissolved and bring to a boil for 2 minutes.
Roll the pastry out on a floured surface and cut rounds from the pastry, at the approximate size of your muffin tray. Arrange the berries in the bottom of the greased muffin tray, until halfway filled with berries. Pour the syrup over the berries and place a pastry disc over each muffin cup and press down lightly to secure.
Bake for 20-25 minutes or until the pastry is golden brown.
Turn the tarts out and allow to cool slightly.  Drizzle over Clover Classic Custard. Garnish with mint or more berries.
