Sticky Orange BBQ Chicken with Red Fried Rice

Ingredients

Sticky Orange BBQ Chicken
2 tbsp oil

6 chicken thighs
1 clove garlic, chopped
½ chilli, seeded and chopped
½ cup orange juice
¼ chicken stock
2 tbsp soy sauce
¼ cup vinegar
3 tbsp brown sugar
2 tbsp honey
¼ t orange zest
salt and pepper
roasted sesam seeds, to garnish
green salad to serve

Red Fried rice
2 tbsp oil

1 tbsp butter
1 onion, chopped
1 carrot, grated
1 cup rice
1 tbsp tomato paste
2 cup chicken stock
1 t paprika
1 clove
2 tomatoes
¼ t lemon zest
juice of 1 small lemon
 
Method

Sticky Orange BBQ Chicken
Heat the oil in a large frying pan over medium-high heat. Add the chicken thighs and fry undisturbed for 5 minutes, then turn over en cook for about 4 minutes or until nicely browned.

Scoop the chicken out en keep aside. Add the garlic and chilli and stir-fry for 30 seconds. Stir in the orange juice, stock, soy sauce, vinegar, sugar, honey and orange zest. Season with salt an peper.

Cook for 5 minutes. Add the chicken and cook until the chicken is cooked and the sauce sticky, stirring occasionally . Scoop out and sprinkle with the sesam seeds. Serve with stir fried rice and a green salad.

Red fried rice
Heat a large pan (with lid) over medium-hot heat, then add the oil and butter. Fry the onion until soft. Add the carrot and rice and fry until you hear the rice started to pop. Add the tomato paste and cook for 1 minute.

Add the stock, paprika, garlic and tomatoes, cover and cook, without stirring, until the rice is cooked. Add more stock or water if needed. Add the lemon zest and juice and stir through.

Serve the chicken with the rice and a green salad.
