Steamed lemon maize pudding with Clover Classic Custard

Cooking time: 1 hour
Serves: 3-4

 60g Butter
60g Sugar
1 Egg
50g Cake Flour
100g Maize meal
5 ml Baking Powder
100 ml Milk
1 tsp vanilla essence
Juice and zest of 1 lemon

Beat the butter, sugar and egg together.

Add the flour,maize, baking powder, milk and vanilla essence, mixing all the ingredients well together. Fold in the lemon juice and zest.
Take a dish, grease well and then pour batter into dish. Cover the dish with foil, place the lid on, and place the dish in a pot with water, with the lid on.  The dish must not touch the water. Bring the water to a boil, then reduce to a simmer and allow to steam for 1 hour, or until cooked.

When cooked, allow to slightly cool, then loosen the sides and unmould onto your serving dish. Serve warm with Clover Classic Custard
