Steak and Potato Salad

Recipe: Boitumelo 'ChewMe' Mogoai

Serves 4

Cooking: 35 minutes
 
INGREDIENTS

Potatoes

500 g new potatoes (baby potatoes) , scrubbed 

1 teaspoon Dijon mustard 
1 Tsp white wine vinegar 
3 Tbsp olive oil 
3 spring onions, very finely sliced 
1 small handful fresh flat-leaf parsley, roughly chopped
2 tsp brown sugar, optional
salt and black pepper
 
Steak
4 x 
200g fillet steaks
2 full sprigs of thyme

3 cloves garlic, cut in half
1 tbsp butter
2 tbsp oil
salt and pepper to taste
 
METHOD

Potatoes
Pre heat oven to 195°C.
Cut the potatoes in half season with salt and pepper then pan fry flesh side down on high heat until golden brown. Remove potatoes from pan and transfer to baking tray and bake for about 10 minutes. While baking, in a small bowl, whisk the mustard and sugar with the vinegar until sugar dissolves then slowly add the olive oil. Add the chopped salad onions and parsley and season well with salt and freshly ground black pepper. Remove potatoes from oven and cool slightly then dress with the shallot and parsley vinaigrette.

 
Steak
Heat oil in a cast iron or stainless steal pan. Lightly season the steak with salt and pepper on one side then fry on high heat, seasoned side down for 4 ½ to 5 min. Season the other side of the steak in the pan with salt and pepper then flip over and fry the other side and immediately add the garlic and thyme. Cook to medium then finish with another bit of seasoning and serve alongside potato salad. Remember to allow the steak to rest before cutting into it.
