Spinach, Mushroom & Cheese Bread Pudding

Spinach, Mushroom & Cheese Bread Pudding

2 T butter
1 onion - diced
3 sprigs fresh thyme
250 g mushrooms, sliced
6 large eggs
½ cup clover milk or cream
1 T Dijon mustard
1 t ground nutmeg
1 t salt
½ t pepper
6 slices sourdough bread or ¾ French loaf, cut into pieces
1 cup baby spinach
1¼ cup grated Clover Cheddar Cheese
¼ cup crumbled Clover Feta Cheese
Preheat the oven to 200 °C. Grease a baking dish as well as a piece of foil that will cover the dish.
Heat the butter in large pan over medium-high. Sauté the onions, thyme and mushrooms, tossing occasionally, until golden brown (4 - 6 minutes). Remove the thyme sprigs.
Meanwhile, in a large bowl, whisk the eggs, milk, mustard, nutmeg, salt and pepper together. Add the bread and mix, making sure to coat all the bread pieces.
Fold in the onion and mushrooms mixture, the spinach and 1 cup of the grated cheese.
Transfer the mixture to the prepared dish and sprinkle the remaining ¼ cup of cheese over. Cover with the piece of foil and bake for 25 - 30 minutes. Remove the foil and bake until golden brown (about 5 – 10 minutes).

Finish with crumbled feta and enjoy!
