Spicy Pork Rib Ramen

Spicy Pork Rib Ramen

1kg Pork ribs, cut into single ribs
6 garlic cloves
10cm piece of ginger, thinly sliced
1 star anise
2 red chillis, halved through the length
10 black peppercorns
5 All spice berries
½ cup soy sauce
Salt to taste
About 1.5 litres of water, or enough to cover all the ingredients and leave enough for a broth.
2T canola oil
4 baby leeks, sliced through the length
4T Sambal oelek
4T Oyster sauce
4T sesame seeds
400g Woolworths Fresh Udon noodles, or Fresh Hokkien noodles , prepared as instructed.
6 free-range eggs, soft boiled
30g coriander
Add the pork ribs, garlic, ginger, star anise, chilis, peppercorns, allspice and soy to the pot along with the salt to season and the water.  Cook on a low heat for 2 hours or until the meat begins to fall off the bone. Remove the ribs and strain off the liquid, discarding all the other ingredients, keep the broth aside.
Brush the leeks with the canola oil before placing them in a pan and slowly cooking them on both sides until they’re charred but still soft and tender inside.
Remove the leeks and set aside. Add the ribs to the same pan used for the leeks and add the sambal oelek and oyster sauce. Toss to coat the ribs in the sauce, adding the sesame seeds just before taking out, giving it a final toss.
Divide the noodles into the serving bowls then add the charred leeks that have been cut into 3. Add the ribs and pour over the broth. Add the eggs and garnish with coriander. Serve hot.
