
Spicy Chicken Wings
with a Chilli Nut Sprinkle
1kg Chicken wings
1t Ground coriander
1t Ground cumin
2t Dried chilli flakes
1t Garlic salt
4t Extra virgin olive oil
1/2C Sweet chilli sauce
½ C Soy sauce
2 Spring onion stalks, thinly sliced
15g Coriander , roughly chopped
2t Toasted sesame seeds
Chilli nut sprinkle: combine
200g Mixed nuts toasted and roughly pulsed.
15g Coriander
1t Garlic salt
1 Red chilli
Salt and freshly round black pepper
4t Crispy onion sprinkle
Coat the chicken wings in the ground coriander, cumin, dried chilli flakes and garlic salt, coat with some extra virgin olive oil then place in the oven to slowly roast at 180 for 20 minutes. Combine the sweet chilli sauce, soy sauce and half the spring onions. Coat the chicken and return to the oven to cook for another 20 minutes, coating the chicken every few minutes. Add to a large mixing bowl, add the remaining spring onions, coriander and sesame seeds to toss to coat. Finally, sprinkle over the chilli nut sprinkle and serve.
