Southern Fried Chicken Nuggets

1kg Chicken breasts, cut into bite sizes
1tbsp paprika
2tbsp black pepper
2tsp garlic powder
2tsp chicken spice
2tsp mixed herbs
3tsp southern coating peri peri spice
1 cup buttermilk
1 large egg
1 ½ cup flour
½ cup cornstarch
1tsp baking powder
salt to taste
Oil for frying
fresh coriander
Serve with roast potatoes with potato spice
Combine paprika, black pepper, garlic powder, mixed herbs and peri peri in a small bowl and mix thoroughly. Whisk buttermilk, eggs, t1 tbsp salt, and 2 tbsp of the spice mix in a large bowl. Add the chicken pieces and toss and turn to coat. Transfer the contents of the bowl into a zip-lock bag and refrigerate for 4 hours or overnight, flipping the bag occasionally to redistribute the contents. Whisk together flour, cornstarch, baking powder, 2 tsp salt, and remaining spice mixture in a large bowl. Remove  chicken from the bag and drop into the flour mixture and coat each piece evenly making sure to remove any access flour. Transfer the coated chicken onto a tray and set aside. Adjust an oven rack to the middle position and preheat oven to 180C. At the same time, heat oil in a pot to 220C and fry pieces until golden brown on all sides.

Transfer onto a baking tray lined with paper towel and bake for 5-8 min then season with salt and serve.
