Snoek Pate


Snoek Pate

200g smoked snoek, flaked and boned removed
3 tbsp labneh (made on show)
3 tbsp thick creamy mayo
1 tbsp lemon juice
Black pepper to taste 
Crackers and crudites for serving or sweet small pepper halves 
Fresh herbs for garnish (Fresh dill or coriander)

To a mixing bowl, combine the flaked snoek, labneh, mayo, lemon juice and salt and pepper. Mix until well combined but still chunky. Add dollops onto serving crackers or pepper halves and garnish with fresh herbs. OR place into a serving bowl along with crudité. 

Note: You can add sour cream if you do not have labneh. 

For the Frikkadels:

500g mince
1/2 onion, grated
2 cloves garlic, chopped 
1 tbsp chutney
1 tbsp ketchup (made from whey)
1 tbsp dried mixed herbs
salt and pepper to taste 

Mix all the ingredients to get and shape into thick patties. Fry in pan and serve with fermented chilli chakalaka and serve with your choice of side or on a bun.
