Smoked salmon croquettes

Smoked salmon croquettes

Serving 4-6
Recipe time: 20 min
1 pack smoked salmon, finely chopped
1 tub cream cheese, chilled
¼ cup parmesan cheese, finely grated
3 tbsp chives
1 lemon, juiced and zested
salt and pepper to taste
3-5 eggs
micro herbs for garnish
Oil for frying
Serve with sauce of your choice
sweet chilli/mayo

Finely chop the salmon then mix in the cream cheese, chives, lemon juice and zest. Season with salt and pepper then  using a spoon, for into small balls. Roll the balls in flour, eggs then breadcrumbs. Make a second layer for more crispiness. Fry at 175 degrees until golden brown and serve with sauce of your choice.
