Simply Chicken Nuggets Kimchi Mac & Cheese

Simply Chicken Nuggets Kimchi Mac & Cheese
Recipe: Boitumelo 'ChewMe' Mogoai
Serves: 3 – 4 
Preparation: 10 – 15 minutes
Cooking: 10 minutes


1 pct Simply Chicken Crumbed Nuggets
3 Tbsp butter
1 tsp garlic
2 Tbsp flour
1½ cup milk, more if you want it runnier
¼ cup kimchi (optional)
2 – 3 cups cooked pasta of your choice
½ cup cheddar cheese
salt and pepper to taste


Preheat oven to 190 °C on grill setting.

Cook the Simply Chicken Crumbed Chicken Nuggets as per package instructions then set aside. In a saucepan, melt the butter on medium heat then add the garlic and sauté for about 1 minute while stirring with a wooden spoon. Add the flour and cook for about 2 minutes before gradually adding the milk and switch to a whisk. Whisk the mixture thoroughly while adding milk until you reach desired consistency. Set heat to lowest setting then add the pasta and stir through. 
Layer the pasta mixture, kimchi and Simply Chicken nuggets in a casserole dish. Top with cheese and bake in the oven until golden brown.

Chef Tip: because kimchi is already flavoured, we do not add too many flavourings to the mac and cheese base. Kimchi is fermented so it is advisable to finish this dish as soon as possible as the reaction between the fermentation and the milk result in a sour unpleasant dish.
