Simply Chicken Mini Egg Waffles

Makes: 4 – 6 waffles

INGREDIENTS

1 pct Simply Chicken Crumbed Chicken Fingers
6 – 8 eggs
2 Tbsp chives, finely chopped
½ cup frozen sweet corn kernels
¼ red pepper, chopped
¼ cup frozen peas

To taste
salt and pepper

To serve
sauce of choice

METHOD
Cook the Simply Chicken Crumbed Chicken Fingers according to package instructions. 
Half way into cooking the chicken fingers, switch on the waffle machine. Once the chicken fingers are cooked, cut them in half and set aside.
In a large bowl whisk the eggs, then add the remaining ingredients except for the chicken fingers and whisk until fully combined. 
Once waffle machine is hot enough, spray on non stick spray then place some chicken fingers onto the waffle machine followed by some of the egg mixture. Close waffle machine and cook until golden brown, about 2 - 3 min depending on the waffle machine.
Remove cooked egg waffle and repeat until you have used up all the egg mixture and Simply Chicken Crumbed Chicken Fingers.
Serve as is or with child's favourite sauce.
