Simply Chicken and Avocado Salad

400 g Simply Chicken Crumbed Chicken Steaklets
1 bunch spring onions, chopped
4 stalks celery, chopped
2 avocados, 1 chopped and 1 halved
¼ cup lemon juice
¼ cup olive oil
2 Tbsp white wine vinegar
2 Tbsp mayonnaise
½ cup parsley leaves
¼ cup chopped dill
salt and freshly ground black pepper
ciabatta bread, sliced and toasted

Prepare the chicken steaklets according to packaging instructions. Cut in large pieces.
In a large bowl, toss the chicken, spring onions and celery to combine. Gently stir in the chopped avocado and 1 tablespoon of the lemon juice.
To make the sauce: In a blender, combine the remaining avocado and remaining lemon juice. Add the olive oil, vinegar, mayonnaise, parsley and dill and blend until smooth. The mixture should be thick and about the consistency of mayonnaise.
Serve the salad on toasted ciabatta slices with the sauce.
