
Sesame Salmon Burger

INGREDIENTS
for the salmon patty
250g salmon, skin removed
1 Tbsp toasted sesame oil
1 Tbsp red wine vinegar
1 clove garlic, crushed
1 tsp ginger
¼ cup spring onion, chopped
¼ cup toasted sesame seeds
2 large eggs
1 Tbsp flour
3 Tbsp canola or olive oil
for the burger:
4 brioche buns, toasted
Lettuce leaves
Sliced cucumber
Pickled red onions
1/4 cup mayonnaise
1 tbsp sriracha
METHOD
Rinse salmon, pat dry and cut into ¼ inch cubes.
In a large bowl, combine salmon, 2 tablespoons oil, vinegar, ginger, garlic, spring onion, sesame oil, sesame seeds, and eggs.
Stir flour into mixture until it thickens.
Form mixture into 6 round patties.
Heat 1 tablespoon oil in a skillet over medium-high heat.
Cook patties for 4-6 minutes per side, until golden brown.
Transfer patties onto a plate lined with paper towels to soak up excess oil and serve hot.
To assemble the burger, mix siracha and mayonnaise together in a small bowl.
Spread the sriracha mayo on the bottom half of each toasted brioche bun.
Add a lettuce leaf, a slice or two of cucumber, and a salmon patty.
Top with pickled red onions and a sprinkle of sesame seeds, then finish with the top bun.
