Scones with jam and homemade clotted cream
3½ cups self-raising flour
3T caster sugar
6T butter, chilled and cubed
1½ cups buttermilk
Strawberry jam to serve
For the home made clotted cream:
3 cups cream
In a large mixing bowl combine the flour and caster sugar together. Add the butter and begin crumbling it into the flour to resemble large bread crumbs. Add the buttermilk and fold together using a wooden spoon.
Once a dough is formed turn it out onto a floured surface and gently roll out not applying any pressure to the rolling pin. Using large ring cutters, cut out some scones and place on a greased baking tray.
Place in the oven to bake for 17- 20 minutes or until the tops have perfectly, browned and the insides are cooked.
For the clotted cream:
Add the cream to a pot to gently simmer over a low heat for 45 minutes or until its reduced to 1 cup of cream. Pour into a ramekin or dish that can be placed in the fridge for 3 hours to chill or overnight for best results.
Serve the scones with jam and the home made clotted cream.
