
Saucy Simply Chicken Steaklets with Cauliflower Mash

Ingredients
Simply Chicken Creamy Mushroom Saucy Steaklets
3 tbsp butter
2 sprigs thyme or 2 tsp dried thyme
1 head of cauliflower, cut into florets
500ml milk, plus extra that is warmed for blending
salt and pepper to taste
½ cup mozzarella cheese
to serve
leafy salad of your choice
Method
Pre heat oven and cook Simply Chicken Creamy Mushroom Saucy Steaklets according to package instructions. While in the oven, begin with the cauliflower mash. In a medium saucepan, melt the butter on medium heat then add the thyme and fry for 30 seconds. Add the cauliflower and fry for about 1-2 minutes to slightly char the exterior before adding the milk and salt and pepper. Reduce the heat and simmer for 15-20 min then switch off the heat. Remove from the stove and using an immersion blender, blitz the cauliflower to a thick purée consistency or add more milk if you like it runnier. Fold in the mozzarella cheese and add more seasoning if desired. To serve, place the cauliflower mash at the bottom followed by the saucy steaklets then serve with salad. Enjoy!
