Samp soup with bread
Recipe: Boitumelo 'ChewMe' Mogoai

Serves: 4

Ingredients 
Samp
1 cup samp, cleaned and soaked overnight

salt to taste
water

Samp soup
2 cups samp, cooked
1 onion, chopped
2 carrots, chopped
2 cups cabbage, shredded
2 garlic cloves, grated
2 tbsp unsalted butter
2 full sprigs of thyme
1 tsp grated ginger
1 ltr vegetable stock, or water
2 tsp cumin
salt and pepper to taste

Method
Samp
Drain the soaked samp then transfer in to a small saucepan, cover with water and bring to a boil. Turn heat to medium and simmer for until soft. Make sure to check the pot every 20 min to check if you need to add more water. Only add salt towards the end once the samp is cooked. Serve immediately or set aside to serve later.

 
Samp soup
In medium saucepan, saute your onions in butter until soft then add the thyme and fry for another minute. Add carrots, garlic, ginger and cumin and saute for about 2 minutes allowing the flavours to build. Now add the cabbage, followed by the samp and cook for a minute before covering with vegetable stock. Season to taste and let cook on low heat until all the flavours are pronounced. This should take about 10-15 min. Serve hot with some bread.
