Salsa Verde Gnocchi

2 packets of Woolworths Italian potato gnocchi
1 punnet of Woolworths Mediterranean vine tomatoes
2 tablespoons of Woolworths hard grated cheese
½ clove of garlic
2-3 anchovy fillets
1 Tbsp capers
1 Tbsp Dijon mustard
1 Tbsp red wine vinegar
15g fresh flat leaf parsley
15g fresh basil leaves
15g fresh mint leaves
5 Tbsp Woolworths Italian extra virgin olive oil
Salt & pepper to taste
Extra olive oil for drizzling on tomatoes
Sea salt for scattering

Pre-heat the oven to 180°C
Arrange tomatoes on a baking tray, drizzle with olive oil and scatter with sea salt
Roast for 15- 20 minutes or until the tomatoes start to blister
Put the garlic, anchovies, capers, mustard and vinegar in a food processor and blitz until a paste forms
Add the fresh herbs and pulse until blended with the other ingredients
Add olive oil and pulse again
Season with salt and pepper to taste
Cook gnocchi according to the instructions on the packet
Once cooked, toss in the salsa verde.
Sprinkle with grated hard cheese and garnish with the roasted tomatoes.
