
Sago pudding with apricot jam syrup

Ingredients:
9 Tbsp sago, soaked for 15 minutes in ½ cup of water
750 ml Clover fresh milk
½ cup sugar
½ tsp salt
3 eggs, separated into two bowls
1 tsp vanilla essence
4 Tbsp apricot jam, melted for 20 seconds in the microwave or in a small pot
Cooking instructions:
Over medium heat, cook the soaked sago in the milk for 15 minutes until soft. Stir constantly.
Add sugar and salt and bring back to the boil.
Beat the egg yolks and add four tablespoons of the hot sago mixture to the egg yolks and stir well. This is to temper the egg yolks.
Slowly add the tempered egg yolks to the remaining sago mixture in the pot while stirring. Cook for 3 minutes.
Stir in the vanilla essence.
Beat the egg whites until stiff peaks and fold into the hot sago mixture. The hot sago will cook the egg whites.
Serve with apricot jam syrup.
