Recipe: Anmar Wilding
Makes: Enough to decorate 60 cookies
Preparation: 20 min
250 g icing sugar, sifted
15 g meringue powder (egg white powder)
40 ml water
½ t lemon juice
½ t vanilla bean paste or vanilla essence
food colouring paste
Place all the ingredients, except the colouring, into your mixer with the paddle attachment, turn the mixer up to slow speed and mix until all the ingredients are incorporated. Turn the mixer up and mix until the icing is smooth, glossy and very fluffy.
To create outlines with the cookies using a very thick royal icing. You can also use a star nozzle and pipe flowers onto the biscuits with this icing.
To fill the surface of the cookies add a little bit of water until the mixture is just runny, and use this the flood the insides of the outlines (the oulines must be dry before filling).
