Ingredients
4 cups cake flour
2 tbsp butter, soft
2 tbsp sunflower oil
1 tsp salt
2cups boiling water
Method
Combine the oil, salt, butter and flour like one would with a scone dough (in between your hands) Add the boiling water and bring the dough together with a rubber spatula Remove the dough from the bowl and carefully bring it together Do not overwork the dough, allow it to just come together When the dough just comes together divided into 30g balls Roll out the balls into circles and fry in a hot non-stick pan 30secons on each side or until it puffs and colors well Remove and keep in between a kitchen towel
