Roti and Cucumber Raita

Makes: 12-14
Recipe duration: 15min
2 cups of all purpose flour 
1 tsp salt 
2 tsp sugar 
6 tbs liquid warm ghee 
300-350ml rapidly boiling water 
Flour for dusting 
Sift flour with salt. Add sugar
Rub in 3tbs of ghee at first to get a fine breadcrumb consistency 
Add in rapidly boiling water and mix with wooden spoon 
Add 3tbs ghee and then knead with hands 
Leave to rest for 5-10min 
Divide into 12-14 balls 
Method for cooking
Take a dough ball and flatten it on a floured surface a little bit
Gently roll out the flatted disc to a roti and then place on a hot frying pan / Tawa and cool on medium heat on both sides. No need to put any additional ghee as the dough and filling have enough 

Cucumber Raita

Makes:1 medium bowl
Recipe duration: 10min

1 medium sized cucumber grated with water squeezed out
1 medium red onion finely chopped
2 green chilli finely chopped
1/4 cup mint finely chopped
1/4 cup coriander finely chopped
Salt to taste 
1 tsp sugar 
1 tsp cumin powder 
1 & 1/2 cup double cream yoghurt 
Mix all ingredients together and refrigerate
