
Rooibos poached pears
with Cardamom cream
4 Rooibos teabags
750ml water
100ml honey
2 pears (it must be peeled, but keep the stem intact)
20g sugar
250ml Fresh cream
Pinch of ground cardamom
First of all, put the teabags, water and honey in a saucepan and bring to a boil.
Add the pears (make sure you’re using nice, firm pears)…just bring it back to boil and then turn down the heat and simmer for about 20-30 minutes. The pears must be soft, but still firm.
Remove the pears from the pan and pour half of the liquid over the pears.
Bring the remaining liquid back to a boil, then remove the teabags and add the sugar.
Boil the liquid until it is reduced to a syrup. Set it aside.
Just whisk the cream and cardamom together until it is thick.
Serve with the cream.
