
Roasted Masala

Preparation time: 10 minutes
INGREDIENTS
2 Tbsp coriander seeds
2 Tbsp cumin seeds
1 Tbsp fennel seeds
1 Tbsp black peppercorns
6 dry red chillies
4 cardamom pods
3 cinnamon sticks
METHOD
Add all whole spices into a dry pan over medium heat, stir or toss frequently so that the spices don’t burn. Once you start to smell the aroma of the spices then you know it’s ready. Place roasted spices in a pestle and mortar or spice grinder and grind until you have a powder consistency. If you don’t have a pestle and mortar or spice grinder you can also use a blender.
