Roasted Cauliflower & Bean Soup
Ingredients
3T extra virgin olive oil
200g leeks, washed and roughly chopped
Salt and freshly ground black pepper to taste
1 large cauliflower head (about 800g), broken into small florets
1 X 400g can butter beans, drained
4 garlic cloves, roughly chopped
2t thyme leaves
Enough chicken stock to just cover the ingredients, about 3 cups
1 cup water
1 cup cream
