Roast Veggie Salad

Roast Veggie Salad

2 Tablespoons soya sauce 
2 Tablespoons apple cider vinegar 
2 Tablespoons extra virgin olive oil 
1 Tablespoon honey 
10g crushed garlic and ginger 
Pinch of salt and pepper
100g fresh baby Spinach washed 
1 round Feta cheese 
Leftover roast vegetables 
2 whole carrots washed and cut into strips

In a mixing jar pour apple vinegar, oil, honey, soya sauce, and add salt, pepper, garlic and ginger. Shake well and set aside.
On the flat ceramic platter scatter baby spinach, carrot strips, roast vegetables, and drizzle with the dressing toss nicely and finish it by crumbling feta cheese on top.
