
Roast Veg and Baby Spinach Superfood Salad

Ingredients
1 roasted red pepper
Handful Baby Spinach leaves
1/2 cup rocket
1 cup grilled baby marrow slivers
1 cup grilled eggplant
1/2 cup roasted patty pans
1/4 red onion, thinly sliced
3 tbsp olive oil
2 tbsp red wine vinegar
salt and pepper to taste
1/4 cup parmesan shavings
½ cup Walnuts
½ cup Cranberries
Method
In a small jar, mix the olive oil and red wine vinegar, Shake vigorously then set aside to chill. Layer the salad in a bowl starting with the lettuce and rocket then followed by all the roasted and grilled veg. Finish off with the parmesan shavings then dress with the olive oil and red wine vinegar dressing.
