Red Velvet Cake with Cream Cheese Frosting and Clover Bliss

INGREDIENTS
Cake
2½ cups (625 ml) cake flour
1½ cups sugar
2 tsp bicarbonate of soda
4 tsp cocoa powder
1 tsp salt
1 cup Clover Bliss Plain Double Cream Yoghurt 
2 extra large eggs
1⅓ cups oil
2 tsp vinegar
2 Tbsp red food colouring
1 tsp vanilla essence

Cream Cheese Icing
100 g butter, softened
1 cup icing sugar
1 tub (230 g) cream cheese
1 tsp vanilla essence
2 Tbsp cream


Red sugar Decoration
sugar
drops of red food colouring

METHOD
Cake
Preheat the oven to 180°C. Grease two 20 cm caking tins. Line the bottoms with baking paper and grease the paper. In a large mixing bowl, sift the dry ingredients together twice. Beat the yoghurt, eggs, oil, vinegar, colouring and essence together. Add to the dry ingredients and pour into the prepared cake tins.
Bake for 30 – 35 minutes or until a skewer inserted in the centre comes out clean.
Let it stand for 10 minutes then turn out on a wire rack and leave to cool completely.
