Serves: 4 - 6

Cooking: 20-25  minutes
 
INGREDIENTS
 
4 cups raw pumpkin, peeled and cubed
salt to taste
¼ tsp cinnamon
1 cup maize meal
3 cups water, plus extra to top up
1½ cups maize rice
sugar to taste
2 Tbsp  Rama
200 g Roasted pumpkin cubes (optional)
crumbled feta, chopped parsley and toasted pumpkin seeds, to serve
 
METHOD
 
Boil the raw pumpkin cubes in a pot of water until soft. Mash the pumpkin and add salt to taste. Add cinnamon and mix to combine.
Mix together the maize meal and water and add to the pumpkin. Add the maize rice and stir to combine. Top up with water and allow to simmer until the maize meal and maize rice are cooked.
Add sugar to taste. Stir through the Rama.
Optional: You can stir through roasted cubed pumpkin.  Garnish with crumbled feta, fresh chopped parsley and toasted pumpkin seeds.
