Rama Morogo with Chicken and Pap

INGREDIENTS
 
For the Chicken
6 large chicken pieces
salt and pepper to taste
2 Tbsp chicken spice
4-6 Tbsp Rama
 
For the Morogo
1 onion, sliced
1 green pepper, sliced
1 Tbsp curry powder
3 Tbsp oil
2 potatoes, diced
1 kg fresh morogo or spinach
salt and pepper to taste
1 - 2 tablespoon Rama
 
For the Pap
3 cups water
salt to season water
2 cups mielie meal
2 Tbsp Rama
 
METHOD
 
For the chicken
Preheat the oven to 180 °C.
In a large bowl, toss the chicken pieces, salt, pepper, chicken spice and Rama in a bowl to coat the chicken. Make sure to rub the Rama onto all the pieces. Place on a prepared roasting tray and roast for 45-50 minutes.
 
For the Morogo 
Heat the oil in a pan and fry the onion, green pepper and curry powder until soft and fragrant.
Add the potatoes and spinach leaves.
Add a little water and cook for about 10 minutes, stirring occasionally and adding a little extra water if necessary.
Add salt and pepper to taste and then stir in the Rama. Set aside.
 
For the Pap
In a medium pot, bring two cups of water to the boil. Add a pinch of salt to season the water.
Mix 1 cup of water with half of the maize meal and pour into the pot of boiling water. Reduce the heat and cover with the lid and allow to sit for 8-10 minutes. Do not stir.
Remove the pot lid and stir. Add the remaining maize meal and stir, ensuring there are no lumps. Reduce to a low heat and allow the pap to cook with the pot lid on for another 10-15 minutes.
Stir the pap - if it’s a little dry, you can add a little water and stir. Add your two tablespoons of Rama and stir.
Dish up your morogo, chicken and pap and enjoy!
